Originally from Des Moines, Iowa, Audrey and Brian Dingeman moved to Florida nine years ago, as service industry vets with 20 years of experience each, working front- and back-of-house positions. The couple — vegans from Iowa, after all — quickly learned how to cook their own vegan meals, and they’ve used this necessary skill set, combined with their restaurant backgrounds, as the foundation for Golden Dinosaurs Vegan Deli.
The “deli” in Golden Dinosaurs’ name refers more so to the fast-casual service that’s provided, than the menu, which is a mix of meatless proteins, salads, soups, pressed sandwiches, and baked goods.
“We felt it is an all-encompassing term, but doesn’t imply the full-service style of a restaurant,” Audrey said. “We aren’t much for formality and like to keep things simple.”
Audrey and Brian fell in love with St. Pete, first traveling to watch the Rays, but eventually decided to move to the ‘Burg after exploring more of what the city had to offer. “The spark of new businesses, proximity to the beaches and airports, and the opportunity to for our business is what finally pushed us to sell our home in Gainesville, FL and make the move to St. Pete/Gulfport,” said Audrey.
The Dingemans always dreamed of opening a vegan eatery. When the building at 2930 Beach Blvd. South became available, they saw Golden Dinosaurs as the perfect fit.
Golden Dinosaurs Vegan Deli opened their doors and have been bringing customers vegan deliciousness since August 2, 2018. Almost everything is made in house, including their seitan (vegan protein). All desserts, cookies, seitan, sauces, vegan meats, soups, and most brunch breads and biscuits are made from scratch. Golden Dinosaurs is now serving an all vegan brunch every Saturday and Sunday from 10am-3pm. They are proudly partnered with other local businesses including: Bandit Coffee, Mother Kombucha, Mastry’s Brewing Co., Pinellas Chocolate Company, St. Pete Ferments, Pinellas Ale Works, Brew Bus, Green Bench Brewing, and many more.
You can check out Golden Dinosaurs Vegan Deli during their hours of operation: Sunday-Tuesday 10am-7pm, Closed Wednesdays, Thursday-Saturday 10am-9pm. Everything is vegan, and most items are made from scratch. The brunch menu is offered every Saturday and Sunday from 10am-3pm, and there is prosecco on tap during brunch, featuring large $6 mimosas.
